You will be missing a lot on a keto diet if you don’t eat at least some green vegetables in the forms of salads on a daily basis. Of course, some people prefer eating more veggies while others are more interested in meat. It doesn’t matter what camp you are in because you are simply going to love the keto cucumber salad I’m about to share.
This salad has one main ingredient. You guessed it! It’s cucumbers (click to learn more about cucumbers and their nutritional facts) in five different varieties plus some other extra ingredients to make the salad taste and look even better.
My cucumber salad is very simple and you will only need only a couple of minutes to prepare it. The effect, however, is going to be spectacular.
Whether you have some experience with a keto diet (click to learn more about the program) or you are just starting out, you’re going to love the keto cucumber salad. It has ideal macros for a ketogenic diet and provides you with a lot of nutrition. Good fats will let you stay in ketosis and keep burning fat.
Ingredients
- 70 g (2.5 oz)Â of fresh ground cucumber (2 small cucumbers)Â
- 120 g (4.2 oz) of pickled cucumbers (2 medium-sized pickled cucumbers)
- 120 g (4.2 oz) of low-salt pickled cucumbers (2 medium-sized low-salt (freshly-salted) cucumbers)
- 90 g (3.1 oz) of long greenhouse cucumbers (1/2 of a large greenhouse cucumber)
- 50 g (1.8 oz) of fresh-packed pickles (5 small fresh-packed pickles)
- 50 g (1.8 oz) of black olives (one handful).
- 20 g (0.7 oz) of celery (1/2 of a celery stick)
- 50 g (1.8 oz) of red onion (one small red onion or 1/2 of a large one)
- 15 g (0.5 oz) of MCT oil or olive oil (2 tablespoons)
- 1 tablespoon of apple cider vinegar (optional)
- A few drops of lemon juice for better taste (optional)
- A few pinches of sea salt or Himalayan salt (for clearer taste)
Instructions
- Wash fresh cucumbers if you don’t buy them from organic sources (especially if you buy them at a supermarket). You can learn how to wash vegetables to remove pesticides from them here.
- Chop the cucumbers into smaller pieces and place them in a larger bowl.
PRACTICAL TIP: The smaller the pieces, the more comfortable it will be to eat your salad.
- Chop the onion and celery into smaller pieces as well.
Add them to the bowl and watch your salad gain new colors.
- Measure and add black olives. 50 g translates to more or less a handful of olives.
- Add apple cider vinegar (ACV).
PRACTICAL TIP: ACV is optional. If you don’t like its taste too much, feel free to skip it. - Add two tablespoons of MCT oil.
PRACTICAL TIP: You can use a different type of oil, such as, olive oil, avocado oil or flax seed oil. I recommend using MCT oil which will give you more energy, increase blood ketone levels and won’t be stored as fat. - Add salt to improve the taste. Gently mix all the ingredients.
- For me the big bowl yielded two smaller dishes of my keto cucumber salad. Ideal as side dishes for two people.
- You can put the salad into the fridge for 15-30 so that it cools down and has a clearer taste. It’s great to consume it cooled especially on hot summer days.
If you don’t want this keto cucumber salad to be more than a side dish or you want to make it the main dish, feel free to add protein-rich foods to it like eggs, cheese, meat or fish. Any of these proteins will go ideally with cucumbers and make a complete keto salad dish.

Ingredients
Cucumbers
- 70 g of ground cucumber (2 small cucumbers)

Instructions

Start from chopping all the different types of cucumbers into small pieces. Place them into a larger bowl.

Chop the onion and olives as well. Add them to the bowl and watch your salad gain new beautiful colors.

You can serve your salad right away or let it cool down in the fridge for about 15-30 minutes.
