Meat (especially fatty meats) is a big fat YES on a keto diet because it provides lots of nutrients, good protein and fats (as long as it comes from organic sources). Meat, except for the vegan and vegetarian types of a ketogenic diet, is often the base food for at least one or two meals a day.
Organ meats are also becoming more and more popular on a keto diet because they have even more nutrients than muscle. Liver is one of the healthiest and most recommended organ meats. Many people say it’s THE HEALTHIEST type of food to eat.
With that in mind, I want to share with you a really delicious keto chicken liver recipe that has only 4 ingredients and is very simple to prepare. You won’t need more than 30 minutes to prepare a healthy and highly nutritious keto meal for yourself and your spouse.

Keto Liver Recipe Ingredients
- 1000 g of raw chicken (or turkey) liver, chopped into small pieces
- 300 g of raw onion, sliced (2 big onions)
- 200 g of raw apple, sliced (1 big apple)
- 80 g of ghee (3 Tbls.)
- Himalayan or sea salt (to taste)
- Black pepper (to taste)
You can, of course, modify the list of ingredients and add your own. However, keep in mind that this is a traditional Polish liver recipe. When combined with fried apple, liver really changes its taste.
Apples and onions aren’t the most keto-friendly foods (you can browse the full keto diet food list here) out there and a really huge portion made from all these ingredients has 54 g of carbs. Note that this is a really big serving that can be split into 4 or 5 smaller ones easily. The whole four-person family can eat it and then one serving will only have 13.5 g of carbs, 48 g of protein and 36 g of fat. You can still add a little bit more fat to your portion (like a tablespoon of coconut butter) to make your keto liver meal even more keto-compliant.
Instructions
- Wash the liver in cold water. Remove all the unnecessary veins and cuticles.
- Peel the onions and cut them into half slices like shown on the picture below. Add salt and gently mix all the slices (with a hand).
- Add 40 g of ghee on the frying pan and wait until it dissolves. Fry the onion while mixing it regularly. When you’re done frying the onion, remove it from the pan and put it on the plate.
PRACTICAL TIP: If you want onion to be hard and grilled-like, fry it just for several minutes. If you want it to be soft, 15 minutes will be just fine.
- Peel the apple and cut it into thin slices. Place it on the pan where you were frying the liver. Fry until the apple becomes soft. When done, remove the apple from the pan and add it to the plate with the liver. You can also combine the two on the pan.
- Cut the liver into small slices. They should be not thicker than 1 cm. Make sure liver slices aren’t too thick or the liver will not be properly fried.
- Add 40 g of ghee onto the frying pan. Wait until butter dissolves and add liver pieces. Make sure the liver pieces aren’t very tightly-stacked. Fry until meat blushes, turn it around multiple times and mix. Make sure the live is cut. If it isn’t, you can stew if for 3-5 minutes. Add salt and pepper to the freshly-fried liver.
PRACTICAL TIP: If you don’t have a huge frying pan, I don’t recommend frying all of the liver at once. It’s better to fry a smaller amount at once and make sure it really fries properly.
- Place the freshly-fried liver onto the already fried onion and apple. Add salt and pepper. Serve hot.
PRACTICAL TIP: If you want to eat your liver later, just heat it together with the fried apple and onion on a pan or use a microwave.

Ingredients
- 1000 g of chicken liver
- 300 g of onion (2 bigger ones)
- 200 g of apple (1 big apple)

Instructions

Wash the liver with cold water and remove any veins and cuticles from it.

Peel the onions and chop them into half slices. Add salt and mix.

Dissolve 40 g of ghee on a frying pan. Put the chopped onion onto it and fry. If you want your onion to be crispy, 3-5 minutes will be enough. If you want it soft, fry it for 10-15 minutes.

Peel the apple and chop it into smaller pieces. Fry it on the same frying pan. Wait until it becomes soft.

Place the fried apple and onion on the separate plate.

Cut the liver into smaller pieces and dry them with a paper towel. Ideally they should not be thicker than 1 cm or not all the liver pieces will cut.

Add 40 g of ghee onto the frying pan and wait until it dissolves. Place the liver and fry until meat blushes. Turn it around multiple times and mix. If needed, stew it for a few minutes. If you have a smaller pan, don't fry all the liver at once.

Put the liver pieces onto separate plates. Sprinkle it with salt and pepper.

Add the fried onion and apple mix on top and serve. It tastes best when hot so serve it hot.
