Keto Tuna Salad (With Eggs, Mayo & Leafy Greens)
June 18, 2018A very simple, delicious and highly nutritious keto spinach salad that you can have within minutes.Â
Spinach is one of those leafy greens (and veggies in general) that should be on your keto plate every day as it’s low in calories and high in nutrients. Not only does it provide you with vitamin K, vitamin B2, vitamin E, vitamin C or manganese but it’s also a great source of two top keto minerals: magnesium and potassium.
Today we’ll be talking a lot about this power food as I’m about to share with you my delicious keto spinach salad recipe. Below is the preview of what you’re going to get. Looks yummy, doesn’t it?
It doesn’t matter if you already have some experience with a keto diet or you are just starting out. You’ll love this keto spinach salad and want your family to taste it too. I swear.
Ingredients
- 100 g (3.5 oz)Â of fresh spinach leaves (about 4 handfuls)Â
- 200 g (7 oz) of low-salt pickled cucumbers (2 big low-salt cucumbers)
- 50 g (1.8 oz) of black olives (1 handful)
- 40 g (1.4 oz) of celery (1 celery stick)
- 50 g (1.8 oz) of red onion (one small red onion or 1/2 of a large one)
- 10 g (0.3 oz) of MCT oil or olive oil (a little less than 2 tablespoons)
- 30 g (1 oz) of macadamia nuts (about 10 nuts)
- 150 g (5.2 oz) of raw bacon (about 9 slices), which translates into about 45 g (1.6 oz) of fried bacon
- A few pinches of sea salt or Himalayan salt (for clearer taste)
Feel free to modify the list of ingredients if you want to come up with a smaller or bigger salad. Also note that I’ve calculated how much fat has fried off raw bacon so that nutritional facts are pretty accurate. Almost 2/3 of raw bacon fries off!
Instructions
- Start from washing and drying fresh vegetables which in this case are spinach leaves and celery. Here is the guide that will teach you how to wash vegetables to remove pesticides from them.
PRACTICAL TIP: You can omit this step if you buy vegetables from organic (and known) sources. - Put spinach leaves into a larger bowl.
- Chop the cucumbers and add them to the bowl.
PRACTICAL TIP: Feel free to use a different type of cucumbers. Low-salt are simply my favorite type.
- Chop the onion and celery into smaller pieces as well.
- Add the vegetables to the bowl and watch your salad gain new colors.
- Measure and add black olives. 50 g is more or less a handful of olives.
- Add macadamia nuts. You can also chop them into smaller pieces.
- Add about 1 and a half of tablespoon of MCT oil.
PRACTICAL TIP: You can use a different type of oil, such as, olive oil, avocado oil or flax seed oil. I recommend using MCT oil which will give you more energy, increase blood ketone levels and won’t be stored as fat. - Add salt to improve the taste.
- Cut raw bacon into slices of the preferred thickness and fry them for about 10-15 minutes. 150 g of raw bacon yielded only 45 g of fried bacon.
- Add bacon slices to the salad once they become crunchy and a lot of fat has noticeably fried off. Gently mix all the ingredients.
- For me the big bowl yielded quite a big salad. I think I can share it with my spouse.

I totally agree 🙂 Spinach is one of my top veggies as well. This is one of the best leafy greens.
I don’t particularly like MCT in my coffee while in the salad it suits just great. Great idea to hit your fat macros
Hi Mary 🙂 You’re right. In coffee MCT oil doesn’t change anything in terms of taste. That’s why if you want to improve the taste of your coffee it’s better to add butter o coconut oil to it and leave MCT oil for salads with raw vegetables. That’s what I often do and it’s delicious.
