Ingredients

  • 4 eggs (medium-sized, organic, free from GMO)
  • 1 avocado (a medium-sized avocado is about 120 g)
  • 20 g of butter (grass-fed)
  • 100 g of Sauerkraut (1 glass is about 100 g)
  • 120 of pickled cucumbers (2 medium-sized pickled cucumbers are about 120 g)
  • 3 pinches of sea or Himalayan salt (add as much as you like)

Instructions

  1. Add the butter to the frying pan. Wait until it dissolves before you crack eggs on it. 

  2. Crack the eggs onto the frying pan once it heats up and the butter has dissolved (but didn't start to burn). 

  3. Wait until egg whites have settled. You can cover the pan to speed up the process. 

  4. Don't let yolks settle. You want them to be raw. 

  5. Take your scrambled eggs off the pan once they look something like on the image below (whites are settled but yolks are still raw). 

  6. Peel your avocado, cut it into small pieces and place it on the frying pan (with still some butter on it). Fry it for a few minutes until it becomes very soft. 

  7. Take two medium-sized pickled cucumbers and measure a glass of Sauerkraut. Of course, you can use more if you like. 

  8. Put fried avocado on your eggs and add some salt for better taste. You can also add pepper if you like or other seasoning.
