Ingredients

  • 300 g of konjac shirataki rice (any konjac or miracle rice is OK)
  • 100 g of light coconut milk (6% fat)
  • 20 g of cocoa powder
  • 40 g of protein powder (micellar casein or whey protein isolate)
  • 80 g of peanut butter
  • 200 g of cottage cheese
  • A few drops of liquid stevia

Instructions

Instructions For Basic Version Of Keto Rice Pudding

  1. Put a bag of konjac shirataki rice into boiling water. Boil for a few minutes. 

  2. Drain the rice using the strainer.  

  3. Pour coconut milk into a separate bowl or pot. Add protein powder and water it becomes to thick.

  4. Add cocoa powder and blend it all. 

  5. Add your dry konjac rice and mix it with the chocolate mass. You can either blend it or simply use a table spoon to mix the rice with the chocolate mass.

  6. Set it aside for a few minutes so that it becomes thicker and cools down. You can also put it into the fridge for a few hours.

  8. Now simply add cottage cheese to the chocolate rice. You can mix it up or simply pour the cottage cheese onto the rice. 

Instructions For Premium Version Of Keto Rice Pudding

  1. Add peanut butter to the mix to make it premium.  Share the premium version with your spouse. 

  2. Enjoy!

Recipe Notes

This dessert is great both hot and cold but I think it's best to let it settle for some 20-30 minutes in the fridge. After spending a night in the fridge it will become even more dense and taste like some premium chocolate cake.
