  • 70 g of ground cucumber (2 small cucumbers)
  • 120 g of pickled cucumbers (2 medium-sized cucumbers)
  • 120 g of low-salt pickled cucumbers (2 medium-sized cucumbers)
  • 90 g of long greenhouse cucumbers (1/2 of a large greenhouse cucumber)
  • 50 g of fresh-packed pickles (5 small fresh-packed pickles)

Other ingredients

  • 50 g of black olives (one handful)
  • 20 g of celery (1/2 of a celery stick)
  • 50 g of red onion (1/2 of a large red onion)
  • 15 g of MCT oil (or olive oil)

Optional ingredients

  • 1 tablespoon of apple cider vinegar
  • A few drops of lemon juice
  • A few pinches of salt (sea salt or Himalayan salt)


  1. Start from chopping all the different types of cucumbers into small pieces. Place them into a larger bowl. 

  2. Chop the onion and olives as well. Add them to the bowl and watch your salad gain new beautiful colors. 

  3. Add MCT oil or olive oil and mix all the ingredients together. 

  4. Add salt and taste your salad. 

  5. You can serve your salad right away or let it cool down in the fridge for about 15-30 minutes. 

Recipe Notes

Feel free to change the ingredients, add more (or less) types of cucumber or add other veggies too. The more variety, the more interesting your keto cucumber salad will turn out.
