Ingredients

  • 30 g of dissolved butter (60% fat)
  • 300 g of eggs (5 large eggs)
  • 30 g of coconut flour (or almond flour)
  • 50 g of cream (30% fat)
  • 10 g of baking powder
  • 30 g of clarified butter (for frying)

Instructions

  1. Put all the ingredients into a bowl and mix them until smooth.

  2. If your keto pancake batter becomes too thick, add some water or milk.

  3. Heat up the frying pan and place pancake ring molds onto it. 

  4. Gently pour the pancake batter into the ring molds. Be very careful or the batter will spill over and go out of the ring mold. 

  5. Fry each round of pancakes for about 2-3 minutes until their bottom becomes brownish. 

  6. Remove half-fried pancakes from ring molds and flip them. Fry for another minute or two. 

  7. Serve with peanut butter, avocado Nutella or anything you like. Remember to count any topping against your daily macros.

Recipe Notes

Feel free to serve (and eat) your keto pancakes with any topping you like. I personally recommend avocado Nutella with peanut butter. Berries (especially strawberries or raspberries) are also very OK.
