February 5, 2019A very quick and extremely delicious recipe for keto chocolate rice pudding with cottage cheese and peanut butter. One (really huge) serving has only 6.5 g of net carbs and less than 500 kcal. Â
One of the best things about a keto diet is that it lets you have almost any kind of meal, cake or dessert in the low-carb and sugar-free version. Not only is the keto version healthy and nutritious but it’s always way more delicious. Â
I’m a real fan of keto desserts and today I want to share with you something really special: keto chocolate rice pudding. There are three versions of this pudding: basic, full (with cottage cheese) and premium (with cottage cheese and peanut butter). Choose the one that suits your daily caloric and macro needs best.
This recipe gives you ingredients and detailed instructions for all the three versions of my favorite keto chocolate rice. Note that each variation is totally keto-friendly, doesn’t contain any artificial sweeteners and has few net carbs.
I can assure you of one thing though: any version of this ketogenic chocolate rice pudding will literally blow your mind. You can have it for breakfast, lunch, dinner, dessert or as your keto cheat meal.
Ingredients
- 300 g (10.5 oz) of konjac shirataki rice. I recommend Better Than Rice which looks and tastes just like real rice.Â
- 100 g (3.5 oz) of light coconut milk (6% of fat). You can have regular coconut milk which has more fat if you want. You can also use only water if you want to cut calories.Â
- 20 g of cacao powder. Make sure it has less than 15 g of carbs per 100 g and has no added sugars.
- 40 g of protein powder. I recommend whey protein. If you want to stick to real foods only, you can skip adding protein powder and simply add more cacao powder. If you decide to skip it, you may want to add more stevia to make your chocolate rice sweet.
- 80 g of peanut butter or almond butter. It can be any nut butter as long as it has less than 10 g (ideally less than 5 g) of net carbs and has no added sugars.
- 200 g of cottage cheese. This is one standard package.
- A few drops of liquid stevia. It can also be erythritol (powdered or granular) or xylitol. Just make sure to use only natural sweeteners.
Instructions
- Place a bag of konjac rice (300 g) into the boiling water. Boil for 1-2 minutes to get rid of the characteristic fishy smell and taste the uncooked shirataki rice has.
- Drain the rice in the strainer. Wait until it dries up and becomes totally flavorless.
- Pour coconut milk into a separate pot. You can mix it with some water or use only water.
- Add your protein powder. You can add about a half of glass of water to dilute it a bit (depending on how dense you want it).
- Now add the cacao powder to the mix.
- Mix it all together until smooth. If you want it sweeter, now it’s time to add a few drops of liquid stevia.
- You can add even more water now depending on how dense you want your pudding to be.
- I wanted it to be of more milk-like consistency so I added some water and blended it again.
- Add rice to your chocolate pudding or chocolate milk (in my case). Mix it up with a spoon or blender.
- Set it aside for a few minutes until it gets a bit more dense.
- Pour your keto chocolate into a bowl. You can consume it now if you want only the basic version. One serving of the basic version (shown below) only has 140 kcal but it’s really huge.
- To get the full version of your keto chocolate rice pudding, add 100 g of cottage cheese (half of one standard package). One serving of the full version (shown below) has only 237 kcal.
- To make it a premium version, add 40 g of peanut butter. One serving of the premium version (take a look at the photo below) is still relatively low in calories (489 kcal).

Practical Tips
If you are on a weight loss program (click to see the keto weight loss section), I suggest sticking to the basic version which is lower in protein, fat and overall calories. This way you can use the basic version as a protein snack. It will be ideal around your workouts.Â

Instructions For Basic Version Of Keto Rice Pudding

Put a bag of konjac shirataki rice into boiling water. Boil for a few minutes.

Drain the rice using the strainer.

Pour coconut milk into a separate bowl or pot. Add protein powder and water it becomes to thick.

Add cocoa powder and blend it all.

Add your dry konjac rice and mix it with the chocolate mass. You can either blend it or simply use a table spoon to mix the rice with the chocolate mass.

Set it aside for a few minutes so that it becomes thicker and cools down. You can also put it into the fridge for a few hours.

Now simply add cottage cheese to the chocolate rice. You can mix it up or simply pour the cottage cheese onto the rice.

Add peanut butter to the mix to make it premium. Share the premium version with your spouse.

Recipe Notes
This dessert is great both hot and cold but I think it's best to let it settle for some 20-30 minutes in the fridge. After spending a night in the fridge it will become even more dense and taste like some premium chocolate cake.Â
