December 2, 2019A super quick and easy recipe for keto peanut butter balls that have 100% of the peanut butter taste, cocoa powder topping and surprise hazelnuts inside. Ready in less than 10 minutes!
One of the resons why a keto diet (click to learn more about the program) is so effective and awesome is that it gives you so much freedom. Of course, you have to avoid carbs and sugars, but you can still have almost any dessert you want. All you need to do is slightly change a few ingredients and any dessert becomes keto-friendly. That’s all.
Today I’m sharing with you another very quick and super simple recipe for a perfect keto snack or dessert. This time I’m showing you how to make keto peanut butter balls. These aren’t regular peanut butter balls but, literally, power balls that have ideal protein-to-fat ratio and which taste simply awesome.
OK, so here they come. My keto peanut butter balls with hazelnuts inside, cocoa powder topping and a true taste of peanut butter. Don’t they look delicious?
Ingredients
- 110 g (3.8 oz) of peanut butter (preferably, organic, non-GMO) with no added sugar. Always read the label to make sure that your peanut butter has only 2 ingredients (peanuts and salt) and has, ideally, less than 5 g of carbs per 100 g.
- 50 g (1.8 oz) of whey protein powder of your choice. I recommend using whey protein isolate. Make sure it’s unsweetened and free from artificial sweeteners.
- A few drops of almond extract. You can use any other extract you like. For me the almond suits the peanut butter taste the most.
- A few tablespoons of a blend of stevia and erythritol or liquid stevia to make your peanut butter balls even sweeter. Be sure to check this list of natural sweeteners.
- 50 g (1.8 oz) of butter (I used butter with 60% fat). Regular butter is also OK, but I used this one to save on calories a little bit.
- 10 g (0.4 oz) of hazelnuts or almonds (in my case it’s 12 hazelnuts). I know the photo shows a bit more.
- OPTIONAL TOPPING: 15 g (0.5 oz) of white chocolate coconut butter. You can use any type you want. Just make sure it’s free from sugar and artificial sweeteners.
Instructions
- Measure and add peanut butter to the bowl.
- Add protein powder and mix the two ingredients together. You can mix them with a tablespoon.
PRACTICAL TIP: The mass will probably turn out to be too dry but don’t worry about it at this point.
- Add several drops of liquid stevia or a few teaspoons of erythritol. The blend of the two will also be fine.
- Dissolve butter and add it to the mix. Your keto peanut butter ball mass will now become much more runny and you will be able to mix all the ingredients more easily.
- Begin forming balls of the preferred size. Don’t forget to add one hazelnut or almond inside.
- Once you form a ball, you may want to place it in a bowl with cocoa powder. This way cocoa powder will naturally stick to the outside of the ball.
- Place newly-formed balls on a separate plate.
- You can also add some extra topping. I added white chocolate and coconut butter on top on each ball. This made them taste even better.
- Place your ready keto peanut butter balls into the freezer for about 30 minutes so that they harden and become more solid.
- Once you remove your keto peanut butter balls from the freezer, put them in the fridge and keep them there until you eat all of them.
- Enjoy!
